ACS Symposium on Chemistry and Safety of Acrylamide in Food
A Symposium "Chemistry and Safety of Acrylamide in Food" is
to be held at the American Chemical Society Meeting
in Anaheim , California , March 28 - April 1, 2004 . The symposium is
organized by Agricultural and Food Chemistry Division, ACS, and topics
will include Mechanisms of Formation in Food, Effect of Processing,
Analysis, Distribution in the Food Chain, Preventing Formation in Food,
Sources of Human Exposure to Acrylamide, Risk Assessment, Biomarkers
of Exposure, Safety and Toxicology.
Thirty leading experts from industry and academia have agreed to speak
at the Symposium and the program will be published towards the end of
2003
